Roasted Chicken with Tarragon Butter

Ingredients:

1 whole chicken (approximately 4-5 pounds)

1/2 cup unsalted butter, softened

3 tablespoons fresh tarragon leaves, finely chopped

4 cloves garlic, minced

1 lemon, zested and juiced

Salt and black pepper, to taste

1 onion, quartered

4-6 sprigs of fresh tarragon

Olive oil for drizzling

Instructions:

1. Preheat Your Oven:

Preheat your oven to 425°F (220°C). Ensure your oven rack is in the middle position.

2. Prepare the Tarragon Butter:

In a mixing bowl, combine the softened butter, chopped tarragon, minced garlic, lemon zest, lemon juice, salt, and black pepper. This will be your flavourful tarragon butter.

3. Prepare the Chicken:

Make sure the chicken is clean and dry. Pat it down with paper towels.

Carefully separate the skin from the chicken breast by gently sliding your fingers under the skin without tearing it. Create pockets on both sides of the breast.

Stuff half of the tarragon butter mixture under the skin, spreading it evenly over the breasts. Massage the outside of the chicken with any remaining butter.

4. Season the Chicken:

Season the chicken generously with salt and black pepper, both inside and out.

Place the quartered onion and fresh tarragon sprigs inside the chicken cavity.

5. Truss the Chicken:

To help the chicken cook evenly, truss it using kitchen twine. Cross the legs and tie them together securely.

6. Roast the Chicken:

Place the chicken in a roasting pan or oven-safe skillet.
